Polpettone (Italian Meat Loaf) - from Nadia Calipa

mix beef mince up with:
finely chopped garlic and onion,
2 tsp. dijon mustard,
flat parsley
and olives (Take the stones out obviously)

Then take a couple of slices of bread, i like to use wholemeal but y can use any bread, soak in milk.
Once it's all squishy add to the mince mix with an egg.
Mix it all up, add salt and pepper and form a rectangular huge burger.
In the middle put a couple of slices of smoked ham and a couple of boiled eggs, cover this filling all up by rolling the sides over each other.
You can then cover the whole loaf with rashers of bacon if you like. I use toothpicks to hold them on.

Cook slowly in middle of oven until cooked. sorry i don't give times and measurements often, it's only because i dont know them.... apologies. i've been doing it by eye since i can remember.
if you find that once y've mixed everything in it's still too sloppy to shape then add another slice of
bread.
